◇ 台所は水の部屋
タイの住宅(特に賃貸)のもうひとつの特徴として、外国人(あるいは富裕層のタイ人)向けの高級住宅を除いて一般的な住宅にはまずキッチンは付いてないということが言えると思います。たまにベランダなどに流しが付いているところもありますが、これは珍しいタイプで、ちゃんとしたキッチンが付いているアパートだとプールもメイド部屋もあってという感じで高級です。文化庁の在外研修で初めてバンコクに一年間滞在したときはこういうところに住んでいました。

ごはんは家庭で作るものという感覚がまあ一般的な考えとしてある日本に比べると、タイではごはんを家庭で作るということが一般的なことだとは言えないように思います。家庭で作るのではなく買ってきて家で食べるという感覚でしょうか。だからキッチンは必要不可欠なものではないのかもしれません。それはいたるところに食べ物を売る店があり、もちろんその場で食べられる屋台や食堂もあり、コンビ二以外でも24時間どこかしらで、しかも安くておいしい何らかの食べ物が手に入るという状況によるところが大きいと思います。

都市の基礎構造の面から見ていくと、タイには都市ガスの設備がなく、ガスはプロパンのガスボンベを買って使います。だからなのかバンコクの一般の家庭では、電気ポット、電気炊飯器、電気コンロあるいは電気鍋(日本ではよく通販とかで売っていて、すき焼きとか焼肉とか何通りかも使えるやつ)などの電気調理器を使うことが多いようです。しかし僕の経験では、電気調理器はガスに比べてやはり熱量が弱いので、炒め物などをするにはテクニックを駆使しないとうまくいきません。逆にカレーとかシチューなど、じっくり煮込む料理には適しています。屋台などでは炭火を使っていて、一般の家庭で使っているところもあるようですが、焼き物などは炭火で焼くだけで何でもおいしくなる気がします。

アトリエにもキッチンなどもちろんなく、洗面所を無理やりキッチンにして使っています。ホームページのタイトルの「水の部屋」というのは「ホーン(部屋)・ナーム(水)」というタイ語を直訳したもので、洗面所(トイレ)を意味します。タイの洗面所はたいていシャワーとトイレとがワンセットになっています。写真の簡易キッチンの斜め後ろには便器があり、その奥にシャワーがあります。どうしてそういうタイトルを付けたのかはちょっと考えてみてください。

考えてみれば、ひとり分の食事なら外で食べるか買って来るほうがよっぽど安くつくのは特にタイの場合明らかです。アトリエのすぐ近所にもやはり屋台や食堂があり、斜め向かいは日本の食材なども売っているスーパーで、なんとアトリエの斜め向かいの部屋は食堂で、といっても住人しか知らない住人のための食堂で、いくらでも食べるものには困らない環境なのにもかかわらず、あえて自炊をするというのは、単に料理をするのが面白いということもありますが、いくらタイ料理がおいしくて好きだといっても、ベースになるものはやはり長い間自分の体になじんだ味(といっても適当に作りますが)がいいということでしょうか。長く暮らせば暮らすほど、舌は正直になってその傾向は強くなってきているように思います。味覚というのはなかなかに保守的なものですね。

◇ Kitchen is a room of the water

Typical residence in Thailand (especially rental) doesn’t have a kitchen except of the residence for the foreigner and the rich Thai people. Some of residences have a kitchen at the balcony, but it is rare. There are the residence with swimming pool and maid room if the residence has a kitchen. And it’s high-class. I lived in the residence like that when I stayed in Bangkok for one year under a grant from Agency for Cultural Affairs in Japan.

Cooking for the meal at home isn't popular in Thailand as compared with Japan. In the home in Bangkok, meal isn’t prepared at home but food is bought in the shop and it eats at home. Kitchen might not be absolutely necessary equipment in Thailand. It also has the shop that sells food everywhere, and has the stall and the open air restaurant eaten of course in the place, and I think largeness depending on the situation of always obtaining a cheap, delicious, some food for 24 hours a day somewhere.

When seeing from the direction of the infrastructure, the city gas isn’t equipped in Thailand, and when people want to use the gas, they have to buy the gas canister of propane. Therefore, it often seems to use an electric jar, an electric rice cooker, and electric cookers such as an electric stove or electric pans -it is looked like sold by the mail order in Japan- in a general home in Bangkok.

But energy of the electric cooker isn’t strong as compared with gas cooker, so in my experience, I have to use some skill for a cooking when I cook by electric cooker. However it‘s good for cooking that be boiled for a long time, for example curry or stew. A stall is using charcoal for a cooking and some of general home is using it also. Any food is so delicious if broiled by charcoal, isn't it?

There isn't a kitchen of course in my studio but I am using a lavatory as a kitchen by force, so a kitchen is partly on a lavatory. The title of this web site “Room of the water” is direct translation from the Thai word “Hoong naam”. "Hoong" mean a room and "Naam" mean a water. So "hoong naam" mean a lavatory.

A lavatory in Thailand is usually set of a toilet and shower. At an attachment photo, toilet is behind a kitchen and a shower is more behind a toilet. Would you please try thinking about why I gave the title like that to my own web site?

I think that buying some food or eating at the cheap restaurant is cheaper than cooking myself especially in Thailand. There are a cheap restaurant and stall near a studio. A supermarket that sells some Japanese food is across from the building of a studio, and to my surprise, restaurant (it knows only resident) for a resident is opposite room from a studio. In spite of my environment about food that isn't inconvenient I want to cook myself. I think it isn't only I like to cook but also even if I like to eat Thai food, taste that got used for a long time is better. My tongue became honesty the longer I live in Thailand, the more. A taste is quite conservative isn’t it?
